Rethink Rice with Organic Pearl Couscous

I’ve talked about couscous for years and even discussed trying it but never had any in my kitchen until I received samples of the RiceSelect Tricolor Organic Pearl Couscous. This toasted Israeli Style Pasta is a complement to any dish and any meal. It comes in a variety of flavors and they have Quinoa.

I’ve discovered a whole new dish that I love. I’ve always enjoyed rice more than potatoes, but couscous may have taken its place. It’s easy to prepare and tastes great with meat, vegetables, fruit, or whatever you’d like to prepare with it.

Garden Veggie Couscous

1 cup uncooked Original Pearl Couscous

3 tablespoons olive oil

1 close of garlic, minced

½ yellow pepper

¼ cup finely chopped onion

1 cup cherry tomatoes, halved

1 cup fresh basil, chopped

¼ cup Parmesan cheese

1 teaspoon balsamic vinegar

Optional extra Parmesan

Prepare couscous according to package directions. While it is cooking, heat olive oil in a skillet and add garlic, pepper, and onion. Sauté until tender. In a serving bowl, combine tomatoes, balsamic vinegar, and Parmesan cheese and stir in cooked pearl couscous. Once vegetables are sautéed, add to the mixture. Salt and pepper to taste and sprinkle with additional Parmesan cheese if desired. Serve warm.
